In contrast with the 35 label, this is a bolder, drier, more flavourful version of a junmai daiginjo. This sake has a gentle “ginjo” nose. It has a wonderful balance between (1) acidity and sweetness and (2) umami and dryness. This flavourful version of junmai daiginjo is an excellent example of a “food pairing” sake (i.e. a sake which is made to be enjoyed with a wide variety of ingredients and/or cooking methods).
