Sake aging is an art as much as science. Many factors affect whether a sake should be aged and whether the result would be desirable. “Artisan of time” (the literal translation of its Japanese name) exemplifies the complexity and boldness of an aged sake.
Aged for 5 years, this sake has a light yellow colour and a sweet aroma of honey with a base note of wheat. It has a rich palate that is full of umami.
Rikyubai is named after a cherry tree in the garden of the brewery. It is the traditional label consumed around the brewery for decades.
