In 1998, the president of a long established Japanese brewery, "Fukukouya" 福光屋commissioned Riedel to create a glass that can correctly convey the beauty and taste of sake. Riedel, the premium wine glass producer, decided that before this dream can be realized, it must first understand Japanese sake. After some studies, Riedel concluded that: (1) the stronger tasting Junmai sake requires a smaller vessel and (2) glass is the proper medium for a vessel designed for the lighter, more aromatic daiginjo sake. From then on, 30 different breweries and 200 sake experts have tested more than 60 sample glasses in 25 separate tasting events. Finally, after 2 years of hard work, all experts reached a consensus on the design of the "Daiginjo Glass".
