This sake differs from the Junmai Daiginjo version in that the slightly lower milling rate give it a stronger “bite” or, in other words, a richer bolder umami taste. This umami taste is best experienced slightly chilled – the result is a smooth, mellow and balanced sake.

Tasting Notes: 
This sake has a unique palate that starts with a clean simple sweetness of rice, which broadens into a nice umami taste, and finishes with a dry after note.
